Several steps build to the final salad crescendo. Chopped apples and bananas marinate in pineapple juice, and kiwi and strawberries are sliced. Then everything is mixed into peach pie filling and spooned into a beautiful serving bowl.

'WE GROW our own strawberries, so our table usually features an abundance of this fruit. We gather other favorite fruits at the store and blend them with our berries for a refreshing, colorful breakfast salad. I serve the dressing on the side, so people can take as much as they want.'

Pineapple juice is stirred into vanilla pudding mix and then the fruit - pineapple chunks, cherries and mandarin oranges - are stirred into that. Chill and serve with sliced bananas.

This is my doctored up version of a diet ambrosia salad my mom always made. I admit that this sounds strange, but it really is sweet and refreshing on a hot summer day! (It's not as low-cal as hers.) It's also easy to adjust to your family's fruit preferences.

Nothing canned here! Use fresh fruit, nuts, and organic vanilla yogurt (very important! - it's less sweet than other yogurt). A dash of cinnamon really adds that special something. Quick and delicious! 

Dried Fruit Salad

If you have a penchant for dried fruit, you 'll love this salad. The fruits are plumped in a hot apple/cinnamon juice overnight, then served with slices of fresh fruit and a sweet orange marmalade sauce.
