Sitting in the southwest corner of the state, San Diego is where California began, originally claimed in the name of Spain by Portuguese explorer Juan Rodriguez Cabrillo. With an average annual temperature of just over 70 degrees, everyday is a good day for a trip to the beach or a farmer’s market. The beaches are everywhere and you are likely to find a market somewhere just about any day of the week—and year-round, no less. The city’s restaurants offer everything from casual takeout to four-star dining, with the fish taco as the local favorite. You haven’t truly experienced eating in San Diego if you haven’t enjoyed one of their deep fried, battered fish wrapped in a corn tortilla with cabbage and sauce.

Chive Cucumber Salad

I didn't care for this too much but my boyfriend liked it. It looked really good and sounded like it would be good, but it didn't come out that way for me. It was a little too watery and, in my opinion, only needed about 1 tbsp vinegar.

Raspberry Lemon Muffins

These muffins were great! I don't really care for rasberries but these muffins were sooo good. Rasberry and lemon go together perfectly. Lemons were really expensive so I used bottled lemon juice, no lemon zest, and 1 tsp lemon extract. I followed suggestions of others and used rasberry yogurt instead of plain, plus used 3 cups fresh rasberries.

Spicy Korean Red Pepper Cucumbers

This was awesome! Cucumber kimchi is my favorite! I already had toasted sesame seeds so I skipped the first step. I also used apple cider vinegar instead because that is what my mom always uses when she cooks Korean food and added a pinch of sugar, or "sweetness" as my mom calls it. It was very easy to make and really tastes like the real thing!
